Global's signature kitchen knives are characterized by their simple, high-quality blades that flow seamlessly into the handle. The characteristic Global handle is recognizable by its black dimples.

Specifications and unique features

  • Heavy Duty: The heavy duty handle gives this small knife extra weight for ultimate control.
  • Patented CROMOVA 18 steel : Global knives are made of Cromova 18 steel. This type of steel is patented by Global and is therefore used exclusively by them. Due to the very fine grain structure of the steel, the knives can be sharpened to a very sharp edge. Global sharpens them 15° per side, for a total sharpening angle of 30°. The chromium in the steel's composition ensures good corrosion resistance. It is therefore stainless steel. Cromova 18 has a hardness of 58 HRC, slightly lower than most Japanese kitchen knives. The advantage of this is that you can easily sharpen the knives yourself.
  • Convex ground : The blade of Global knives is convex ground. This means the edge of the blade is ground in a U-shape instead of a V-shape. The advantage of a convex ground knife is that the edge is much stronger. You can also sharpen convex ground knives yourself. You can use a whetstone (or a belt grinder) for this, but you cannot use a pull-through sharpener.
  • Balance and ergonomics : This paring knife fits perfectly in your hand thanks to its balanced design. The handle is very comfortable to hold, suitable for both left- and right-handed users.

Maintaining your Global knives
Cleaning your Global knives is very easy. The blade and handle blend seamlessly, so bacteria can't hide anywhere. The stainless steel handle is also much less fragile than wood. The handle of Global knives won't split if left damp for too long. Although the knives are made of stainless steel, we don't recommend putting them in the dishwasher. Contact with other hard objects can scratch the blade. Furthermore, high temperatures and harsh cleaning agents are harmful to the steel. Simply wash your knives by hand and dry them immediately.

Sharpen regularly
