  • The #2000 grit is good for sharpening relatively dull knives . So you often only use this grit after some intensive use of your knives, or when you clearly notice that your knives are duller compared to when they were new.
  • The #5000 grit is a lot finer. You use this grit to sharpen your razor blades. Logically, you use this side of the sharpening stone after you have sharpened your knives with the #2000 grit.

Step-by-step plan: sharpening your knife with a sharpening stone

  1. Soak the sharpening stone
    Soak the stone in water for 10-15 minutes and keep it moist while sharpening.
  2. Determine the grinding angle
    15° for Japanese knives (HRC 60+).
    20° for German knives (HRC 54-58).
  3. Sharpen with grit #2000 (for sharpening)
    Move the knife diagonally over the stone with light pressure.
    Sharpen until you feel a small burr on the other side of the blade.
  4. Turn the knife around
    Sharpen the other side to remove the burr.
  5. Polish with grit #5000 (for razor sharpness)
    Repeat the grinding movements with even lighter pressure.
    This refines the cut and provides a mirror-smooth finish.
  6. Dry the knife and sharpening stone thoroughly
    Your knife is now razor sharp and ready to use!
